I need some help with my college major?

Hey guys I am currently a sophomore in college majoring in chemical engineering, and minoring in political science. What I really want to do is keep the chemical engineering major and pick up political science as a double major. I already know what I want to do with the chemical engineering major but there isn't much I could do with the political science major but go to law school and I am completely open to that. My current GPA is a 3.45, and I already have about 62 credits. Do you guys have any suggestions for me. The reason I am asking is because my ad visor is so hard to reach she's apparently the best in the school but I've only seen her once.
